Amy Amabilia Cervantes


Amy Amabilia Acosta Cervantes of Monte Vista, Colorado passed away unexpectedly on July 18, 2023, at Penrose Hospital in Colorado Springs. Amy was born January 23, 1967, in Ojinaga Chihuahua, Mexico to Eva Silva and Manuel Acosta. Amy grew up with her siblings, Juanita, Samuel, Manuel, Ana, and Adan. She lived in Mexico until she was 6 years old then moved to Monte Vista, Colorado with her parents. Amy attended school in Monte Vista. She held positions in the service industry, home health care, construction, and as a homemaker for her family. She met Carlos Juarez in 1985 and they began their family in 1986 with the birth of their daughter, Daisy. They continued to grow their family with the birth of their son, Carlos in 1988, and daughter, Iris in 1989. Amy’s true love was caring for her family. She expressed this love through her passion for cooking, hosting family and friend gatherings, and feeding them her delicious meals. She took pride in her cooking, always wanting the perfect flavors, perfect for the people she loved. Serving her family and friends brought her great joy. She served others until the end of her life as a donor, saving the lives of many.


Amy continued to pursue her passion for food, culture, and people as she traveled around the country with her husband, Ramon Cervantes. They married in 2011 and enjoyed the adventures of travel. This lifestyle encouraged Amy to complete the naturalization process to receive her citizenship on September 14, 2018.


Amy was blessed with 6, almost 7 grandchildren (new baby “Princess” due December 2023). She adored them all and was so proud of each of them. Moses, Elyan, Elyas, Ezekiel, Xzavier, and Isabella loved their grandmother dearly.


Amy’s kindness and passion for her family will forever be remembered and celebrated.


Amy is proceeded in death by her father, Manuel Acosta, her twin brother Jose Alfredo Acosta, nephew Cristian Acosta, paternal grandfather Cirilo Acosta, paternal grandmother Tarcila Salazar Acosta, and maternal grandfather Juan Daniel Porras.


She is survived by grandmother -Dionicia Martinez, mother - Eva Silva (Lorenzo), siblings - Juanita Perez (Gabino) Samuel Acosta (Lilia), Manuel Acosta (Maria), Ana Acosta Molina (Miguel) and Adan Acosta, children- Daisy Juarez (Rafeal), Carlos Jr. Juarez (Meredith), and Iris Juarez (Ray), and grandchildren – Moses, Elyan, Elyas, Ezekiel, Xzavier, Isabella, and baby girl on the way December 2023, and many nieces, nephews, cousins, aunts, uncles, and friends.


A viewing will be held at Stromayer’s Funeral Home in Monte Vista, Tuesday, July 25, 10 AM – 4 PM. Funeral services will be held at Stromayer’s Funeral home Wednesday, July 26 at 10 AM, burial service immediately following at the Monte Vista Cemetery. An honorary meal for Amy will be served at the Elks Lodge in Monte Vista at 2 PM.
